Rcoky Road is one of those deliciously moreish treats which I simply can’t get enough of, even though I probably shouldn’t! It’s also a great way to have a good clear out of the biscuit jar and use up the ones that always get left behind. Now I tend to make this recipe with digestives as that’s traditionally what people use. They’re also the least favourite biscuit in this household so always the ones left at the bottom of the biscuit jar!
However, I have used up all sorts to make Rocky Road – Oreos, chocolate digestives, HobNobs, ginger thins and shortbread to name but a few. Really you can throw in whatever you want.
I also like to add a bit of dried fruit to mine – cranberries, glace cherries, dates, raisins, sultanas – whatever I happen to have to hand. And mini marshmallows are a nice addition if you want some squish and colour in there. As well as mixing them in I always reserve a few for the top because the ones mixed in don’t always look that attractive whereas the ones sprinkled liberally on top simply look pink, white and fluffy. Of course, if you’re veggie you can simply omit the marshmallows altogether or use vegan ones.
Beyond that you can add in anything else that takes your fancy – pretzels, nuts and seeds or even breakfast cereals.
This recipe makes enough for 12 squares and requires an 8″ square tin but you can double the recipe and use a brownie tray to make more.

Rocky Road
This easy-to-make recipe is a great way to use up leftover biscuits and give your kids a tasty treat
200gBiscuits (digestives or other preferred biscuits)
200gGood quality milk chocolateA good 70% dark chocolate works well if you want something a little less sweet
135gUnsalted butter
45gGolden syrup
100gRaisins or other dried fruit
100gMini Marshmallows
Instructions
Grease and line an 8" square cake tin. I find the best way to do this is take two long strips and lie them at 90 degrees to each other with the ends hanging out over the sides of the tin so once it's set you can simply lift it out using the baking parchment.
Place the biscuits in a bowl and crush (end of a rolling pin works well for this) until it resembles small pieces. About the size of £1 coins or a little smaller. You don't want to crush them too much so try and keep the pieces chunky.
Add in fruit, marshmallows and anything else you're using and mix together. Set aside. Reserve some marshmallows for sprinkling over the top.
Put the butter, golden syrup and chocolate in a saucepan and melt over a gentle heat, stirring regularly.
Once melted, pour the mixture into your dry ingredients and mix well until well coated. Spoon the mixture into your prepared tin and gently press it down. Sprinle over your remaining marshmallows and any other decoration you like.
Refrigerate your Rocky Road for a couple of hours. Remove from tin and cut into 16 squares using a sharp knife.
Store in an airtight container. Your rocky road should be good for about a week.
