Really what’s not to like about chewy chocolate chip cookies. These beauties closely resemble the ones you might buy from a well-known high street cookie shop. They really dont’ disappoint either.
Super easy to make, they’ll quickly become a staple in your house. Well, they certainly are in mine – my kids love them.
The key to getting properly chewy chocolate chip cookies is to not overcook them. It can take a little getting used to but you definitely want to pull them out of the oven sooner rather than later. Use a timer on your phone and don’t leave them in for longer than 8 minutes unless you like them a bit crispier. They may look like they’re underdone but they’re not. They’ll collpase in on themselves to give it that distinctive crackled look and be perfectly chewy once cooled down.
If you want to get adventurous add a little cocoa to turn them into double chocolate chip cookies. You can also add in a few drop sof orange essence to go for the divine chocolate and oraneg combination, my absolute favourite.
I made these a lot during those sunny days of the first lockdown where we thought we’d be out of it by July – oh how naive we were but I am please we are finally emerging from the Covid pandemic now. But one of my favourite rituals during that time was to sit down with a cookie and a lovely cup of tea, in particular a herbal blend from MD Tea. Chewy Chocolate Chip Cookies
Think of a well-known high street cookie company beginning with M and these chewy chocolate chip cookies are the superb homemade equivalent
Line two baking trays with greaseproof paper and preheat the oven to 200c (180c for fan-assisted ovens)
Beat together the butter and sugars in a large bowl until pale and fluffy, then add in the egg and vanilla. Mix until well combined.
Sift the flour and salt together then mix into the butter/sugar mixture until a soft dough forms. Finally, stir through the chocolate drops
Break into roughly 24 pieces. They should be about walnut sized. Roll into balls and place them on the baking sheets. Remember to leave space between them as they will spread during cooking.
Bake them in the oven for around 6-8 minutes. Give them a minute less and they'll be super chewy, leave them in for 10 minutes if you prefer them crunchy.
Leave them to cool on the trays for around 15 minutes, then transfer to a wire rack to cool completely. Store in an airtight container and they should last for around 5-7 days, if not eaten before then!
